Giving agricultural produce that might otherwise be lost a new purpose is the result. This year's plums were particularly well suited to distillation, expressing the concentrated fragrance of overripe fruit. The gin's name, AMRTA, draws on Sanskrit associations with immortality, a universal remedy, soma, nectar, elixir and the philosopher's stone, reflecting the producer's aspiration to create a restorative experience for drinkers.
