The local growers' association supplies large, fully ripe Masui Dauphine figs. Around one tonne arrives in several deliveries, soft enough to crush by hand and ready for vigorous fermentation. Fresh aromas become sweet and rich as fermentation progresses, followed by several distillation runs. Approximately one year in the old oak cask used annually softens the figs' green character with wood.\u003c\/p\u003e\n\u003cp\u003eReduction uses distilled water made from a cold infusion of fermented fig-leaf tea, combining clear leaf flavour with elegant fig aroma. Freshly harvested figs are placed in the bottle, gradually releasing additional fruit and sweetness.
