Semi-carbonic maceration lasts 10�1 days, followed by approximately nine months in 216-litre barrels. The Japan-bound lot is bottled without added sulphites. It offers freshness now and develops complexity and elegance with further ageing.\u003c\/p\u003e\n\u003cp\u003eNose: Dahlia, nutmeg, liquorice and herbs, opening into dried strawberry and currants.\u003c\/p\u003e\n\u003cp\u003ePalate: Dried strawberry and raspberry sweetness lead into bright, clear fruit. Pomegranate and currant acidity meet calming cedar aromas. Juicy fruit and soft tannins lead to a delicate finish.\u003c\/p\u003e\n\u003cp\u003eMarcel Lapierre helped establish French natural wine and influenced producers throughout Beaujolais and beyond. After his death in autumn 2010, his son Mathieu took responsibility for the family's Morgon-rooted winemaking. Organic cultivation has been practised since 1981, without chemical fertilisers, herbicides or insecticides, and grapes are harvested entirely by hand. Indigenous yeasts drive semi-carbonic maceration. Wines other than Raisins Gaulois mature on their lees in old barrels.
