Natural conditions such as the quality of the rice and the weather that year have a huge impact on sake brewing and the resulting sake, for better or for worse.
So, what will the first sake of the year be like? In fact, there are many things that even sake brewers and sake brewers with many years of experience cannot understand until they actually try it. Therefore, the job of brewing sake is one that comes from scratch every year. This is why even veteran tojis say, ``Every year is a first year''.
Until the new sake is released, the brewer is nervous and nervous, and the drinker is excited and excited, wondering what kind of sake will be released this year. Every year, we are excited and excited to enjoy freshly squeezed sake, just as we are when new students arrive at their entrance ceremony. We named it ``Lucky Bag'' to capture that thrilling feeling of ``the fun you get when you open it.''
The lucky bag is filled with the first Junmai Ginjo of the year without any make-up, making it a sharp and dry raw unprocessed sake. The auspicious name, which is suitable for the year-end and New Year holidays when new sake is on the rise, adds a touch of glamor to the auspicious occasion.
