A slightly sweet white wine based on Koshu, Japan's indigenous wine grape, blended with Kerner and Delaware. Slow, cool fermentation preserves its fruitiness; from the 2020 vintage onward it uses an easy-open screw cap. Ashicoco has been made with a renewed spirit every year since the winery began in 1984. Selected Koshu grapes are gently pressed and blended with Kerner, Delaware and other varieties. After settling, the clear juice is fermented with wild yeast at low temperature to retain fresh fruit character. Its bright fruit aromas and gentle yet substantial palate appeal to new wine drinkers and experienced enthusiasts alike. It pairs naturally with Japanese foods seasoned with soy sauce, miso, mirin and other fermented condiments, and is versatile with the mixed Japanese, Western and Chinese dishes of an everyday table. The 2012, 2013 and 2015 vintages were served in international first-class cabins, lounges and business class. Well chilled, it is also an excellent aperitif for a relaxed moment.
