Made entirely from Chardonnay grown by Kotoyo Imamura at Bee's Knees Vineyards in Tsukuba, Ibaraki. She began cultivating many wine-grape varieties at the foot of Mount Tsukuba in 2015; this wine uses her Chardonnay. Named Kadode, departure, for a bird taking flight, the grapes were harvested in August just before full ripeness to retain the higher acidity suited to sparkling wine. Primary fermentation took place in stainless steel, followed by secondary fermentation in a pressure-rated beer tank. Taut acidity and concentrated fruit combine lemon-and-lime freshness with the elevated perfume of peach and melon.
