In 2018, we released the Famille series for the first time in Merlot “Japan” Cuvee Kuniko. This is the second release of Pinot Noir. This series can be harvested in the best condition among the grapes whose quality changes every year, and is only released in vintages when the winemaking process is excellent. In 2023, the weather was good from the first half of the year, there were no autumn rains during the harvest period, and there were few typhoons, so it was a very blessed year for Pinot Noir, which has a thin skin and dense grains, with no cracking caused by rain. We harvested the ripest grapes over 6 days from September 30th to October 5th, and the sugar content exceeded 23 degrees. In the past, we have used various brewing methods, including whole bunch, whole destemming, 1/3 whole bunch fermentation, natural fermentation, and selective yeast fermentation, but this year, after completely destemming, we dried 20% of the stems in the sun for 3 days, returned the parched stems to the tank, soaked them at a low temperature for 6 days, and fermented them with dry yeast for about a week. After MLF, it will be aged in barrels for about 12 months (30% new barrels) and bottled for 9 months before being released. This is a dry red wine that allows you to enjoy the aroma of red fruits such as raspberry and strawberry, as well as the complex flavors of spices, medicinal herbs such as amakusa, mushrooms, and dead leaves from the forest.
