We are committed to "purely produced in Ehime Prefecture" and use Matsuyama Mitsui produced in Ehime Prefecture as raw material rice.
The rice is polished to a maximum of 25%, resulting in a clear and refreshing rice that is a blessing from Mt. Ishizuchi.
Preparation is carried out in the bitterly cold February using water for preparation, and is kept at low temperature for a long period of time.
After fermenting for about 30 days, it has a delicate and soft aroma with an elegant aroma.
A Junmai Daiginjo sake with a harmonious taste has been completed.
