Bijofu's finest sake and the ultimate Junmai Daiginjo expression of the brewery owner's dream. To make and serve it at its very best, the entire team devotes itself to a single batch each year. Special-grade rice from Tojo's Special A district in Hyogo is polished to 30% and brewed slowly for 35 days with Kochi yeast. After pressing, it is bottled unpasteurized, matured at -1°C, pasteurized in bottle at the ideal moment, then ice-aged until early autumn. Elegant rising aroma, the breadth of undiluted sake, and Bijofu's signature acidity create a crisp, food-oriented Junmai Daiginjo. Around 10°C, after warming slightly from refrigerator temperature, its aroma and breadth expand further. Pair in a wine glass with rich dishes such as oysters, eel, or lean beef.
