A sake without the lingering flavor some people associate with the category, recommended even for those who do not usually enjoy sake. Soft, sweet ginjo aromas suggest melon and banana, while clean acidity and a slightly dry profile make it suitable with food. This Junmai Daiginjo is made with Special Grade Yamada Nishiki from Hyogo polished to 50%, Little CEL-24 yeast and pure brewing water from the Mount Ishizuchi Yoshino river system. Kawasawa Shuzo, Kochi Prefecture's nineteenth brewery, began operations in October 2024. Production is led by Toru Kawasawa, a veteran with 30 years in the industry who studied at Tokyo University of Agriculture and conducted brewing research at the former National Tax Administration Brewing Research Institute before serving as an executive at a local brewery and helping establish this new one. The brewery creates sake inspired by the natural landscape of the Hongawa district. The name “Yama ni Kumo ga” expresses the hope that, like looking up at clouds above the mountains, drinking the sake will lift people's faces and brighten their feelings and outlook, allowing the brand to walk forward together with its customers.
