Valdespino Oloroso Don Gonzalo is a full oxidative dry Oloroso sherry crafted by Sanchez Romate at 21% ABV in a compact 500ml bottle. Fully matured without protective flor yeast, it undergoes long oxidative ageing to build deep dark fruit, roasted nut, leather and rich oak spice depth. Its nose bursts with dark sultana compote, dried black fig, roasted walnut, polished dark leather, cinnamon stick and molasses oak. The palate delivers thick, rounded dark dried fruit sweetness, prominent medium spirit warmth, layered dark orchard fruit and firm tannic oak from extended bodega maturation. It has an extraordinarily long, warm finish with lingering fig, raisin and roasted nut wood vibrancy. Served lightly chilled neat as a digestif, it pairs excellently with aged hard sheep’s cheese, dark chocolate truffles, braised dried fruit compotes and slow-cooked game meats.
