Valdespino Fino Inocente is a classic dry Fino sherry produced by Sanchez Romate at 15% ABV in a 750ml bottle, aged under a continuous flor yeast layer in coastal bodegas of Jerez. It delivers bright saline mineral, raw almond, fresh green herb and subtle unripe apple notes with zero heavy oxidative dried fruit sweetness. Its nose releases coastal sea brine, chamomile grass, raw almond, green apple skin and light flor yeast aroma. The palate is ultra-dry, light and crisp, carrying sharp saline mineral, delicate herbal undertones and faint grassy tannins. It finishes short, clean and saline with lingering fresh floral vibrancy. Best served well chilled neat, it pairs perfectly with green olives, Iberian ham, fried seafood tapas and mild fresh goat cheeses.
