Made from Pinot Noir harvested in the sunny, warmer-than-average 2021 season. After around five days of cold soaking, the grapes underwent 14 days of maceration and fermentation. Temperature and liquid circulation were controlled precisely to avoid extracting harsh flavors, with the gentle concentration of simmered cuisine in mind. The final wine blends 60% matured in French oak with 40% matured in stainless steel and is bottled without filtration. Excellent fruit condition brought out Pinot Noir's varietal aromas more clearly than usual, with a clean bouquet and mature notes of forest floor. Deep color and relatively firm tannins reflect the favorable season, while the predominance of French oak gives this a classical, Burgundy-inspired style.
