Chardonnay (74%) and Petit Manseng (26%) from Kaminoyama, Yamagata Prefecture, were co-fermented. Skin contact and cool fermentation drew out aroma and umami, followed by sur-lie maturation for 14 months in French oak to build complexity and depth. This concentrated, full-flavored dry white wine harmonizes aromas of tropical fruit and honey with vanilla and nuts. Favorable weather from September through October 2021 allowed the grapes to ripen in excellent health. The Chardonnay harvest was therefore delayed until mid-October to coincide with the Petit Manseng, enabling the wine to be made from fruit of unprecedented ripeness.
