Agave: Espadin species Class: Joben (no aging period)
Category: Mezcal Artesanal
A mezcal made from espadin (a type of agave) from Oaxaca.
This is a Joven that has not been barrel aged.
Only mature agave plants are used, and the spherical part (piña) of the agave plant is called tatemado.
By heating it using the traditional method of steaming it in a hole dug in the ground,
It has a unique smoky aroma.
The heated piña is then squeezed in a large stone mill called a taona, and the juice is poured into an open wooden vat.
After natural fermentation with wild yeast, it is distilled twice in copper pot stills.
It is produced in three locations in Oaxaca, and each lot is different.
(Details can be found on the band label at the bottom of the bottle.)
The scent is with refreshing aromas of lemon and grapefruit peel.
A calming smoke with a hint of tar spreads out.
The texture is soft and the transparent sweetness fills your mouth.
A smoke like burnt lemon surrounds the whole thing.
Spices burst out towards the finish, fading into a slightly grassy sweetness.
The smoky feeling typical of mezcal is not too strong, and it has an approachable taste that can be used other than straight.
This mezcal is easy to use as a cocktail base.
