Beniharuka sweet potatoes are fermented with hand-worked white koji, slowly distilled in a traditional kabutogama still, then matured. An elegant, profound sweet-potato aroma meets umami of striking concentration and brightness. The name SLOWLY expresses the philosophy: distill the mash very gradually in the old chintara style to draw out its savory richness with care, then mature the shochu slowly over the long term to achieve exceptional depth.
Amakusa Sake Brewing Pond SLOWLY Red Potato is a robust sweet‑potato imo‑shochu from Japan, bottled at 30% ABV, 1800‑millilitre large‑format bottle. This higher‑strength expression delivers a deep, multi‑layered aromatic profile. The nose reveals rich roasted red sweet‑potato, deep caramel and subtle dried‑fruit undertones. On the palate, it is full‑bodied and densely rounded, presenting intense root‑driven sweetness, powerful red‑potato varietal character and well‑balanced distilled‑spirit character. Its long, warm finish is best enjoyed neat or on‑the‑rocks, a substantial‑size premium imo‑shochu for contemplative sipping and gatherings.
