Signatory Islay Single Malt 30 Year Old 1991 is an ultra-aged Islay single malt Scotch whisky independently bottled by Signatory Vintage at cask strength 50.7% ABV, with a standard 700ml bottle volume. Distilled in 1991 and matured for three full decades in oak casks, this rare long-aged expression showcases mellowed Islay peat character softened by extended wood maturation. On the nose, gentle medicinal peat smoke mingles with dried dark berries, candied citrus, aged vanilla and subtle briny coastal undertones. The palate delivers balanced smouldering peat, stewed stone fruits, toffee and restrained oak spice with a medium-full, silky texture. It features an exceptionally long finish with lingering smoky fruit sweetness and quiet saline warmth. Best enjoyed neat; a tiny splash of water unlocks layers of dried fruit without overwhelming the delicate, well-integrated peat profile.
