Crafted from wild Dasylirion texanum harvested in Chihuahua’s Chihuahuan Desert, it undergoes traditional open-pit roasting, hand milling and wild pine-tank fermentation to deliver distinctive desert botanical and mineral complexity. Its aroma unfolds with bright cooked sotol heart sweetness, fresh desert green herb, subtle wild citrus zest, dry flinty mineral and soft pine fermentation notes, free of harsh alcoholic heat. The palate balances vibrant vegetal sweetness and silky rounded mineral warmth, accented by delicate dry sage and faint tropical fruit spice unique to desert sotol. It features a lengthy clean finish of preserved green fruit, arid herbal and lingering mineral undertones.
