Romate Manzanilla Viva la Pepa is a dry Manzanilla sherry produced by Sanchez Romate at 15% ABV in a standard 750ml bottle, matured under protective flor yeast in coastal Sanlúcar de Barrameda. It delivers ultra-saline, bright herbal, green apple and delicate almond notes with zero oxidative fruit weight. Its nose bursts with fresh sea salt brine, green apple, chamomile, raw almond and faint fresh yeast flor. The palate offers crisp, light dry herbal brightness, faint subtle alcohol warmth, sharp saline mineral and delicate grassy malt undertones. It finishes short, clean and saline with lingering green fruit vibrancy. Served well chilled, it pairs perfectly with raw oysters, anchovy tapas, fried seafood, green olives and light salted soft cheeses.
