MINABE 35 is a new curaçao built around Kishu Nanko plums grown on the producer's own farm in Minabe, Wakayama, together with Japanese citrus and a diverse selection of botanicals. Conceived as a cocktail curaçao rather than an extension of umeshu, it highlights the plums' acidity and fragrance, offering greater dimensionality than a conventional orange-led style. Its sugar level is approximately one third that of a typical sweet curaçao, allowing its complexity to remain clear and giving bartenders flexibility. Add syrup if additional sweetness is desired.
Tasting notes: Nanko plum acidity leads into a substantial citrus body centred on blood orange. Ripe plum and lavender provide fragrance, peppers define the edges, and vetiver and angelica give structure and weight.
Serving suggestions: Substitute for curaçao or triple sec in classic cocktails for additional depth. It also works well with tonic or soda; the restrained sweetness allows the tonic's character to show without losing definition. Chilling sharpens the plum acidity, making a chilled soda-and-tonic serve especially suitable for warm weather.
Principal ingredients: Nanko plum, blood orange, Kawachi Bankan citrus and satsuma mandarin. Approximately 30 botanicals include lavender, spent passion fruit, ashitaba, Assam pepper, Voatsiperifery pepper, vetiver and angelica.
