A rosé sparkling wine made with Tabiji, a grape variety unique to Hokkaido. After careful selection, the grapes are destemmed, crushed, and fermented with the skins for about 5 days to extract the color and flavor, and the juice is squeezed in the right conditions. After the primary fermentation, the wine was bottled and then proceeded to the secondary fermentation in the bottle. All fermentation is done using wild yeast. The appearance is pale salmon pink. The aroma has gorgeous red fruits such as cherries, and refreshing impressions such as peppermint and ginger. When you put it in your mouth, it has a bursting fruit flavor and smooth acidity, and the moderate tannins from the skin give it a deep flavor and a long finish. The low sulfite content gives it a gentle drinking experience, resulting in a wine that you can't help but drink. The wine is finished with the lees from the secondary fermentation in the bottle remaining, so it becomes cloudy. There is a possibility that it will boil over, so please cool it well in the refrigerator before uncorking it. It can be enjoyed immediately after release, but the lees left in the bottle will add even more flavor to the wine as it ages. The addition of sulfites is kept to a very small amount. Please store in a cool, dark place below 16 degrees.
