Brewery note: Hatsushibori forecasts the character of the brewing year. As last year, the goal was a delicious sake ready to drink immediately, somewhat clear yet richly aromatic. During fermentation, however, an unintended natural microorganism intervened, making the intended flavor impossible—the same phenomenon seen in Tsuchida F, whose design therefore appears on this year's front label. The brewery sincerely apologizes to those expecting last year's style.
This unexpected event arose because Tsuchida chooses to make every sake without additives and entirely by the kimoto method. Most modern breweries select their microorganisms and add lactic acid to maintain control, so such intervention has become extremely rare, potentially occurring at only a handful of Japan's roughly 1,300 breweries. Tsuchida's brewing cannot be separated from the diverse microorganisms living in the brewery.
For the first time, this release uses 100% rice from the brewery's own fields: pesticide- and fertilizer-free Kame no O cultivated by the team in Kawaba, Gunma. The flavor is unusual and fascinating—sweetness arrives first, acidity follows, and sweetness returns to linger at the end. Lower alcohol makes it accessible even to newcomers.
Pair it with acidic foods such as cheese, tomato stew, sweet-and-sour black-vinegar dishes, yurinchi chicken, balsamic preparations, or seasonal fruit. Retailers are asked to refrigerate it, but the sake may also develop at room temperature; after purchase, drinkers can explore how its flavor differs under refrigerated and ambient storage.

All orders are processed within 1-3 business days (excluding weekends and Japanese public holidays) after payment confirmation. Once your order is processed and shipped, you will receive a confirmation email with a tracking number, which allows you to monitor the status of your shipment in real time. Return & Refund
Since we ship alcoholic beverages, all sales are generally final. We don't accept returns or exchanges just for a change of mind.But if things go wrong—like your bottle breaks in transit or we accidentally send you the wrong one—we've absolutely got your back! Here is how we handle it:
The 7-Day Window
If your item is damaged or incorrect, please reach out to us within 7 days of signing for your package. After 7 days, we unfortunately won't be able to process a return or exchange.
Item Condition
If we sent you the wrong item by mistake, please make sure it stays unopened and in its original condition. (If your item arrived broken, just safely take some clear photos for us instead!)
Refused or Undeliverable Packages
Any packages that are refused by the customer upon delivery, or returned to sender due to an incorrect/incomplete address provided by the customer, are subject to a return shipping and restocking fee. This fee will be deducted from your refund.
In addition, original shipping costs are strictly non-refundable for refused packages. If a package is abandoned or destroyed by the carrier due to a customer's refusal to pay local customs duties, no refund will be issued.
