〈Isseki〉 is a company that sells specific non-standard rice grains (commonly known as kuzumai) that are not distributed on the market.
This is a sake brewed using 100% alcohol.
Specified rice grains are those that, during the process from harvest to polishing as edible rice,
Rice that has been screened out due to grain size or cracks.
Due to the current rice shortage, our brewery took on the challenge of making sake using this specific rice grain last year.
The sake became very popular due to its good taste!
The product sold out quickly, and even after that we received many inquiries asking, ``Are you running out of that Kuzumai sake?''
As it is a sake that Tsuchida Sake Brewery feels is very meaningful,
We have decided to release a new brand of brewing this year, Isseki!
Why did you name it Ikkishi?
When you think of ``Ikkoku'', you may think that it means ``Ikkoku'', which is the Japanese word for ``Ikkoku'', which refers to the amount of sake produced.
This alcohol is pronounced "Isseki".
This name comes from the idiom ``to throw one stone''.
At Tsuchida Sake Brewery, we believe that ``you can make good sake with any kind of rice.''
It is said that high-quality sake can be made without using sake rice or polishing the rice a lot.
We continue to take on challenges to expand the possibilities of sake.
What I would like to reiterate here is that I do not intend to criticize sake rice or the practice of polishing rice a lot.
Our brewery also uses sake rice on a trial basis.
However, it would be no fun if the market became just that.
Sake still has a wide variety of possibilities, and I feel it is of great significance to explore these possibilities.
Alcohol made from 100% specific rice grains is the best example of this.
Delicious sake is made using rice that is normally used for food rather than sake production.
This sake “Ichikoku” challenges the established concept of sake rice and polishing in the Japanese sake industry.
At first there are waves and ripples, but eventually it returns to a calm state.
There is some resistance at first, but eventually various breweries will start making sake using this type of rice.
We hope for a future where options other than sake rice are chosen and consumers can choose alcohol from a variety of options.
We put our thoughts into the name and label.
I want to contribute to society
The specific rice used in this sake is from Kawaba Village, Gunma Prefecture, where Tsuchida Sake Brewery is located.
This is a rice called "Yukihotaka" grown by Yukihotaka Co., Ltd. in the same village.
``Yukihotaka'' is a rice that is said to be a phantom rice and is sold at a high price.
Just because it's smaller than the regulations or broken, I can't call it ``Yukihotaka''.
Even though it is edible, it is classified as “kuzu rice” and is not sold on the market.
I learned of the current situation where Mr. JA is taking it to an unknown location.
A farmer in the village said, ``I would be more happy if my sake became local sake than being used by someone I don't know about.
When I heard that, I decided that I would like to use it at my house.
By turning this type of rice into sake, the customers were very happy and said, ``My rice has become sake!''
We are very happy and hope that we will continue to have more connections like this and be of help to farmers.
What does it taste like?
Although we were able to create a unique and rich flavor that you would imagine from Tsuchida Sake Brewery,
We purposely brewed it with the aim of creating a clean and refreshing taste.
The result was just as I had hoped, with a beautiful, mellow, and gentle taste!
It has no edges and can be drunk smoothly, making it a drink that can be enjoyed by many people.
proof of quality
Last year's Hatsushibori revealed that there was no problem with its taste and quality.
At Tsuchida Sake Brewery, we also use specific rice grains for some of our regular sake brewing.
This is something that we have no regrets about, as we have communicated this on our official SNS.
We believe that some people who drink our alcoholic beverages may have concerns about the quality.
However, with Ichikoku, an alcoholic beverage made using 100% specific rice grains,
“We are able to make such delicious sake even with 100% alcohol, so
We can proudly say that there is no problem with the quality of other alcoholic beverages.
We believe that this material can be used with peace of mind.
Tsuchida Sake Brewery proudly delivers <Ichikoku>.
We hope that through this sake, the possibilities of Japanese sake will spread like ripples.
Please give it a try!
