The weather in 2023 was good from the first half of the year, and there was little rain during the harvest period from October to November, making it a very blessed year for the late-ripening variety Riesling. Harvested over 4 days from October 30th to November 2nd. The yield was the highest ever, as there were almost no diseased fruits, but the sugar content and ripeness did not rise that much due to over-sprinkling, so the flavor was a bit lacking. Since the weather was good, I think we need to improve for the future.
Fermented with dry yeast after 24 hours of low-temperature soaking and juice extraction. 100% Riesling, aged for about 5 months in old barrels after MLF.
This is a dry white wine with aromas of pine and Japanese citrus, moderate acidity, and a sweet-bitter taste.
