The 2023 Merlot was blessed with good weather from the first half of the year, with little rain from the rainy season to autumn harvest, and was able to be harvested in very good condition with high sugar content and ripeness. We held a harvest festival and had everyone harvest under the blue sky. The yield was much higher than usual, and we were sorry for the inconvenience caused by not having enough baskets.
Because the yield was large and the quality was good, the grapes were prepared in two tanks: one for saignée (removal of the juice) and the other for increased extraction. This is an assemblage of 1 barrel of saignée (with fruit juice removed) and 2 tanks with added fruit juice. We brewed it a little longer than usual to make the extraction stronger. This is a dry red wine with aromas of spices such as ripe cassis, black fruits, and cloves, firm tannins, and the aroma of barrels.
