Merlot and Chardonnay grown in equal proportions in the same traditional Japanese overhead-trellis vineyard are blended with Cabernet Franc, Chenin Blanc, Syrah, Petit Manseng and Petit Verdot from vertical-trained parcels, forming a seven-colored rainbow. The wine seems to condense an entire summer day on a highland plateau into one bottle. Immediately after opening it is crisp and refreshing like sunrise. As it opens, comfortable warmth gathers like the rising sun, then a growing sense of weight suggests the density of the surrounding air. Near sunset, the lingering finish fills with warmth even as the light fades. Early-harvest Chardonnay and the other white varieties were destemmed, crushed and fermented first in stainless steel. A portion of later-harvest, destemmed and crushed Merlot was added, while the remaining Merlot and other red varieties fermented separately; the Syrah was whole-bunch fermented. After an initial blending, the wine was divided again between barrels and stainless steel for maturation, recombined one year later, bottled and further matured before release. Fermented with wild yeast, unfiltered and unfined, with only a minute addition of sulfites. The grapes are grown without tillage, using natural ground cover and no chemical fertilizers; neonicotinoid insecticides and herbicides are avoided to protect the ecosystem.
