Like other varieties, Pinot Noir and Cabernet Franc have decreased in yield, so although they are not usually popular, we fermented each of the two varieties and then assembled them together.
Pinot was still paired with Muscat Berry A, but I had the impression that Muscat Berry A became dominant.
Cabernet Franc has a gorgeous aroma and a gentle astringency, and I think its fragrant tendency goes well with Pinot Noir.
Carne Franc was hand-destemmed and fermented with dry yeast, and Pinot Noir was added by drying 20% of the stems in the sun, but they were not completely dried, so there is a slight greenish tinge.
After fermentation, it was aged in old barrels for about 14 months.
