The weather in 2025 was good from the first half of the year, the rainy season ended about 20 days earlier than usual, and there was little rain during the harvest season, making it a very blessed year for grapes throughout the year.
Merlot has been harvested for more than 2023, and although the sugar content (22.3 degrees) has dropped slightly, we were able to harvest very beautiful grapes.
After destemming and crushing, fermentation was carried out using dry yeast for about 12 days, and after MLF, it was aged in old barrels for about 8 months.
I blended a little bit of Komatsu Farm Komatsu's Black Queen to add acidity and fruit flavor.
It is a light, dry red wine that is easy to drink, with aromas of ripe cassis, blackberries, and some dried herbs, and a fruity flavor full of berries.
93% Merlot from Kitaono, 7% Black Queen. Aged in old barrels: about 8 months. Production quantity: 593 pieces
