In 2025, we were blessed with good weather, and the sugar content (22.6 degrees) and ripeness of both Kerner and Gewurztraminer, which were harvested on September 25th and 26th, were high.The harvest of Kerner, which had drastically decreased due to the late frost the previous year, recovered to an all-time high.This year as well, we conducted a night harvest from 3:00 in the morning and were able to harvest in very good condition.
There was not much Riesling this year, so it will be a blend of two types: Kerner and Gewurztraminer.
Therefore, the acid was weak, so after about 2 weeks of low-temperature fermentation with dry yeast, I did not perform MLF (lactic acid fermentation) and subjected it to sterilization filter treatment for the first time.
The finish is fresher and purer than usual.
The scent and taste of white flowers and sweet white peach, and as the temperature rises, you can also feel the flavors of honey and quince.
82% Kerner from Kitaono, 18% Gewurztraminer. Aged in old barrels: about 7 months. Production quantity: 660 pieces
