The 2023 Merlot was blessed with good weather, with little rain from the rainy season until harvest, and the sugar content and ripeness were very good.
Because the yield was high and the quality was high, we used two tanks for preparation.
This is 10% saignée, soaked at low temperature for 5 days, and fermented for 17 days. We soaked it for a longer time than usual and extracted it thoroughly.
In 2024, the harvest decreased due to late frost, and there was more room in barrels, so this 2023 vintage was aged in barrels for about 21 months.
This is a dry red wine with ripe black fruits, cloves, coffee and vanilla, and rich tannins and fruit.
100% Merlot from Kitaono. Aged for approximately 21 months in barrels (92% new barrels, 46% French oak, 46% American oak).
