Romate Palo Cortado Rehente is a premium Spanish Palo Cortado sherry produced by Sanchez Romate at 20% ABV in a standard 700ml bottle. This unique style merges the nutty elegance of Amontillado with the rich dried fruit depth of Oloroso via a rare oxidative ageing process. Its nose delivers toasted hazelnut, dried fig, orange peel, subtle saline mineral and polished aged oak. The palate balances savoury nutty malt sweetness, distinct medium spirit warmth, layered dark fruit and soft wood tannins. It finishes long, silky and mineral-driven with persistent nutty dried fruit vibrancy. Served chilled neat, it pairs beautifully with cured Iberian ham, aged hard cheeses and wild mushroom tapas.
