Romate Palo Cortado Escondido 375ml is a rare Spanish Palo Cortado sherry produced by Sanchez Romate at 20.5% ABV in a half-size bottle. It blends the nutty refinement of Amontillado and the rich dried fruit depth of Oloroso after unique oak maturation. Its nose releases roasted hazelnut, dried fig, orange peel, saline mineral and polished aged oak. The palate balances savoury nutty malt sweetness, gentle spirit warmth, layered dark fruit and subtle wood tannins. It finishes long, silky and saline with lingering nutty dried fruit vibrancy. Served chilled neat, it pairs wonderfully with cured ham, aged hard cheese and wild mushroom tapas.
