Romate Amontillado Olvidado is a dry Spanish sherry from Sanchez Romate, bottled at 20% ABV in a compact 375ml half-bottle. Long oak-aged under flor yeast, it delivers nutty almond, savoury dried fruit, subtle saline mineral and polished wood without heavy sweetness. Its nose offers roasted hazelnut, dried fig, mild citrus rind, sea salt and soft toasted oak. The palate carries crisp savoury depth, balanced medium spirit warmth, layered nutty tannins and faint herbal undertones. It finishes long and dry with lingering saline nutty notes. Ideal chilled neat, or paired with salted nuts, cured ham, mushroom tapas and hard aged cheeses.
