Matured under flor yeast in coastal oak casks, it undergoes slow biological ageing to soften sharp youthful acidity and integrate subtle saline oak-derived delicate complexity. The nose offers fresh green apple, briny coastal saline, subtle almond oak and faint dry floral herbal undertones without harsh alcoholic fumes. The palate delivers well-balanced bright dry fruit and salty coastal flavours, ultra-light smooth alcohol warmth and faint crisp nutty woody spice brought by long flor cask maturation. It features a soft lingering finish of green citrus and light dry nutty notes.
