Sweet-potato shochu made entirely from Tsurunashi Genji, a native variety discovered in 1907 and commonly grown in Kagoshima from the Taisho era through the early Showa period. After wartime conditions favored higher-yielding, better-shaped varieties, it had effectively disappeared by around 1965. In summer 2003, farmer Hidetoki Taniyama of Kirishima obtained ten seedlings and revived the potato. Even today he is the only grower in Japan cultivating it on a meaningful scale. Because it has never been improved through modern breeding, it is difficult to grow in today's soils. The potato is intensely sweet and sticky, qualities reflected in the shochu's rich sweetness and concentrated flavor.
