The standard black-koji Komaki made with Kogane Sengan, distilled by indirect heating in a copper still of the kind used for whiskey. As with regular Komaki, increased citric-acid concentration produces a classic sweet-potato shochu with calm aroma and rich, abundant potato umami.
Ko Brewing Ko Copper Potato is a sweet‑potato‑based shochu distilled using copper stills, bottled at 25% ABV, 1800‑millilitre large‑format bottle. This copper‑distilled imo shochu delivers a smooth, multi‑layered aromatic profile. The nose opens with ripe baked sweet‑potato aromas, soft caramel‑like sweetness, light fruity hints and mild earthy undertones. On the palate, it is medium‑bodied and silky‑textured, offering rich root‑driven sweetness, refined gentle nuance and clean polished distilled‑spirit character. Its mellow, approachable finish works beautifully neat, over ice or diluted with hot or cold water, a generously sized everyday shochu for regular enjoyment.
