Made by an unusual method using Beniharuka sweet potatoes, commonly eaten as food, and Yumeikkon, a sake-brewing rice originating in Fukuoka, for the koji. Yellow koji is added during preparation to encourage fruity aroma, after which the spirit is carefully stored and matured for two years in traditional earthenware jars used since the brewery's founding.
