The second release in Asakura Distillery's THE WILD&SOUTH RUM series. Its theme is distilling the terroir of Kyushu and Okinawa. The series uses ingredients such as freshly pressed sugarcane juice and brown sugar supplied by farmers in Fukuoka, as well as brown sugar from Okinawa's eight principal islands. Small batches in many styles are planned, using different ingredients and production methods, from white to dark rum.
Asakura, Fukuoka, is one of Japan's few sugarcane-growing regions, with a history of around 150 years. This release uses sugarcane juice from Chikuzen, Fukuoka. Fermentation begins immediately after the freshly pressed juice arrives from the grower, since it oxidizes and deteriorates quickly and every moment matters. An authentic agricole rum, it confidently expresses the character of Asakura's land. To bring the aroma and flavor into balance, this white rum was matured in tanks for about one year.
The story behind the production is one of original challenge, a philosophy long treasured by the company. About ten years ago, then-president and current chairman Hiroyuki Shinozaki embodied that spirit. At the time, rum was far less familiar to Japanese consumers and was seldom crafted by small distilleries. The starting point was an encounter with brown sugar made by a local farmer. Inspired by its vivid expression of the land, the team set out to make rum from it. True to their philosophy, they explored many approaches: versions made only from brown sugar, versions using barley koji, vacuum and atmospheric distillation, sweetened distillates, barrel aging, and tank aging. This release presents an agricole rum made directly and entirely from fresh sugarcane juice.
AGRICOLE WHITE RUM is produced by Shinozaki Distillery in Kyushu‑Fukuoka Prefecture, bottled at 50.0% ABV with a 500ml bottle size. This agricole‑style white rum delivers a bright, multi‑layered aromatic profile driven by fresh pressed sugar‑cane juice. The nose opens with vivid green sugar‑cane notes, fresh grassy undertones, bright tropical fruit brightness, subtle floral hints and clean spirit warmth. On the palate, it is lively and crisp, showcasing vibrant cane‑juice sweetness, fresh herbal‑grassy layers, zesty fruity accents and firm high‑proof structure. The long, clean‑lingering finish highlights the authentic, cane‑forward character of this Japanese agricole white rum.
