Distilled in 1996, this quarter-century mature Caol Ila delivers elegantly evolved Islay peat, balanced by rich dried fruit and mature oak influence. The nose opens with restrained smoked peat, sea salt, dried citrus, ripe stone fruit and honeyed vanilla oak brightness. On the palate, it is full-bodied and silky, with flavours of smoked barley, briny maritime undertones, candied orange, gentle caramel and layered tannic wood spice depth. The long, warming lingering finish showcases beautifully integrated aged peat and rounded orchard fruit character, a refined expression of long-matured Caol Ila.
