Valdespino Amontillado Tio Diego is a classic dry Amontillado sherry from Valdespino, Spain, bottled at 18% ABV in a standard 750ml format. After initial biological ageing under flor yeast, the flor layer fades, shifting to slow oxidative maturation and building rich nutty, saline and spice complexity. Its nose releases roasted hazelnut, dried apricot, subtle sea salt brine, leather, cinnamon and faint dried raisin. The palate delivers rounded nutty dryness, gentle medium spirit warmth, layered dark stone fruit and soft tannic oak from long bodega ageing. The finish is long, saline and nut-forward with lingering dried fruit and baking spice vibrancy. Served lightly chilled neat, it pairs excellently with aged hard sheep’s cheese, Iberian ham, wild mushroom tapas and braised nutty desserts.
