Baron Micaela Pedro Ximénez is an ultra-luxury sweet Spanish dessert sherry produced by Baron, bottled at mild 15% ABV in a standard 750-millilitre bottle. Crafted from sun-dried Pedro Ximénez grapes and matured in oak solera casks, slow oxidative ageing concentrates the fruit and softens intense sugar density, delivering thick dried raisin, dark fig, molasses and subtle dried spice layers. The nose bursts with viscous black raisin, stewed fig, dark molasses and faint dried cinnamon sweetness without harsh alcoholic heat. The palate balances rich syrupy fruit sweetness and delicate light fortified warmth, with subtle dried herbal oak undertones from long barrel maturation. It holds an extremely long velvety finish of concentrated dark dried fruit and soft molasses.
