Signatory Old School Single Malt 31 Years Old is an ultra-aged limited Scottish single malt independently bottled by Signatory, bottled at a mild 43.5% ABV in a standard 700ml bottle. Matured for 31 full decades, this rare long-matured release delivers ultra-mellow dried fruit, antique nutty cereal and subtle polished aged oak with all harsh youthful tannins fully softened by extended cask rest. The nose unfolds with sun-dried fig, golden raisin, baked walnut, aged honey grain and silky worn vanilla oak. On the palate, gentle jammy dried fruit sweetness blends with smooth rounded malt and mild medium alcohol warmth, balanced by ultra-soft, deeply integrated aged sherry oak tannins. Its extraordinarily lengthy finish lingers on preserved dark dried fruit, nutty pastry and faint mellow spicy wood hints; this scarce long-aged collectible bottling suits neat slow sipping, with light mineral water optional to gently unlock its delicate layered antique malt complexity.
