Kasane is a new proposal from Shoro Shuzo. Focusing on acidity, long regarded as undesirable in shochu, the distillery challenged itself to create a new style in which lactic-acid bacteria generate acetic acid, adding depth to both aroma and flavor. Kasane is built around this base spirit, then blended for harmony with components that have undergone multiple distillations and others matured in oak. The glass reveals an acidic lift, grape and orange fruit, the sweetness of steamed sweet potato, and woody and sweet aromas from the cask. Pour a 1:1 twice-up serve into a wine glass and take time to enjoy the bouquet.
Matsu Sake Brewing Raid‑Bene‑Potato is a character‑driven sweet‑potato imo‑shochu from Shoro Brewery in Miyazaki Prefecture, Kyushu, bottled at 28% ABV, 720‑millilitre standard‑size bottle. This medium‑high strength bottling delivers a rich, multi‑layered aromatic profile. The nose offers ripe baked sweet‑potato, subtle honey sweetness and soft earthy undertones. On the palate, it is medium‑full‑bodied with a smooth rounded texture, presenting concentrated root‑driven sweetness, distinct sweet‑potato varietal expression and well‑balanced distilled‑spirit character. Its warm, lingering finish works wonderfully neat, on‑the‑rocks or with hot‑water dilution, a versatile premium imo‑shochu for varied drinking occasions.
